Roasted Garlic Parmesan Aioli
Freshly roasted heads of garlic create a decadent base before blending together with ingredients like Dijon mustard, olive oil, Parmesan cheese, and fresh lemon juice and thyme. Create a perfect pairing with Alexia Crispy Rosemary Fries.

- 3 Heads Garlic
- 2 T Olive Oil
- ½ tsp Kosher Salt
- ¼ tsp Black Pepper
- 1 C Mayonnaise
- 2 tsp Dijon Mustard
- ¾ C Grated Parmesan Cheese
- ½ tsp Lemon Juice
- 2 tsp Fresh Thyme

To make the roasted garlic: Preheat the oven to 425°F. Cut the tops off of the heads of garlic and rub with olive oil, salt, and pepper. Tightly wrap the garlic in aluminum foil and place in a shallow baking dish. Bake for 40-50 minutes or until the garlic is golden brown and can be easily pierced with a fork. Remove from the oven and let cool to room temperature.

Once cool to touch, gently press at the bottom of each garlic clove to remove from the skin.

Add the roasted garlic and the rest of the ingredients to a food processor and pulse until smooth and creamy.
