Lobster Roll Tots
Sweet, tender lobster is tossed in a bright lemon-garlic butter and layered over crispy Alexia® Crispy Potato Puffs or Alexia® House Cut Fries, then finished with a smooth garlic aioli for a refined twist on the classic lobster roll.
Ingredients
- 16 oz Alexia® Crispy Potato Puffs
- 2 (4 oz) Lobster Tails, thawed
- 4 tbsp Butter, melted
- Juice and Zest of 1 Lemon
- 1 clove Garlic, minced
- ¼ tsp Salt
- ¼ tsp Pepper
- 1 tsp Parsley, chopped
- 2 wedges Lemon, for serving
- Aioli Sauce:
- ½ cup Mayonnaise
- 5 cloves Garlic, minced
- 2 tbsp Lemon Juice
- ¼ tsp Salt
- ¼ tsp Pepper
- 1 tsp Dijon Mustard

Preheat air fryer to 380°F (195°C).

Prepare lobster tails by cutting lengthwise through the shells and meat with kitchen shears to butterfly them.

Make garlic butter by melting butter, adding lemon zest and garlic, and cooking until fragrant.

Brush some of the butter mixture onto the lobster tails and season with salt and pepper.

Air fry lobster tails meat-side up for 5 to 7 minutes, or until the meat is opaque. Cooking time may vary.

Remove lobster meat from shell and dice into ½ inch pieces. Spoon the reserved butter mixture over the meat.

Combine the garlic and lemon juice in a small bowl. Stir to combine and let rest for 10 minutes to allow the garlic to infuse the lemon juice.

Stir the garlic-infused lemon juice into the mayonnaise with Dijon and mix until well combined.

Taste and add salt and pepper as desired.

Prepare Alexia® Crispy Potato Puffs according to instructions on package.

Top cooked Puffs with lobster and drizzle of aioli. Garnish with lemon wedges.
