Green Bean & Mushroom Onion Ring Casserole

A combination of green beans, cream of mushroom soup, and parmesan cheese is topped with Alexia® Crispy Onion Rings for green bean casserole with a delicious crunch.

Ingredients

  • 1 Bag Alexia® Crispy Onion Rings (13.5 oz)
  • 16 oz Baby Bella Mushrooms, diced
  • 2 tbsp Unsalted Butter
  • 4-5 Garlic Cloves, minced
  • ½ tsp Dried Thyme
  • ½ tsp Dried Parsley
  • ½ tsp Kosher Salt, to taste
  • ¼ tsp Freshly Ground Black Pepper, or to taste
  • ½ cup Vegetable Stock
  • 1 tsp Cornstarch
  • 2 cups Frozen French Green Beans
  • ½ cup Whole Milk, room temperature
  • 10.5 oz Cream of Mushroom Soup
  • ½ cup Grated Parmesan Cheese

To make Vegan, swap in Vegan Butter, Vegan Milk Alternative, and Vegan Parmesan, in 1:1 ratios.

Directions

  1. Preheat oven to 400°F.

  2. In a large skillet over medium-high heat, add the diced mushrooms. Cook, stirring occasionally, and allow the liquid to release from the mushrooms for about 8-10 minutes.

  3. Add in the butter and once it’s melted, stir in the garlic, thyme, parsley, and salt. Cook for 1-2 minutes.

  4. Whisk together the vegetable stock and cornstarch, then pour the mixture into the skillet and bring to a simmer for 1-2 minutes. Add the frozen green beans and simmer for another 1 minute.

  5. Stir in the milk, cream of mushroom soup, and parmesan cheese until combined. Remove from heat and transfer to an 8" x 8" baking dish.

  6. Place the onion rings on a large baking sheet lined with aluminum foil or parchment paper and cook according to the package directions. Bake the green bean casserole with frozen onion rings for 15-18 minutes or until bubbly.

  7. Once the casserole and onion rings are fully cooked, top the green bean casserole with onion rings, and enjoy!
