- 1 Bag Alexia Organic Yukon Select Fries with a touch of Sea Salt (28 oz)
- 3 T Olive Oil, divided
- 1 Yellow Bell Pepper, chopped
- ½ Red Onion, chopped
- 1 Zucchini, chopped
- Salt
- Black pepper
- 4 Eggs
- ⅓ C Goat Cheese
- 1 T Fresh Chives, chopped
- 1 T Fresh Thyme, chopped
- Preheat oven to 425 ̊ F.
- Place Alexia Organic Yukon Select Fries With a Touch of Sea Salt on a baking sheet in a single layer. Bake for 18-20 minutes, flipping halfway through to ensure maximum crispiness.
- Heat 2 tablespoons oil in a large skillet over medium heat. Add peppers and onions and sauté until onions have softened, about 7 minutes. Add zucchini and cook for another 3-4 minutes. Season vegetables with salt and pepper. Remove from heat and set aside.
- Add remaining tablespoon of oil to a separate skillet over medium-high heat and, working in batches, fry the eggs to desired doneness. Season eggs with salt and pepper.
- To assemble, divide the fries among plates and top with vegetables. Crumble goat cheese over vegetables and top with a fried egg. Garnish with chives and thyme.
