Mediterranean Loaded Breakfast Fries

These Mediterranean-inspired breakfast fries include sautéed bell pepper, red onion and zucchini, and are topped off with a fried egg, crumbled goat cheese and fresh herbs.

  • 1 Bag Alexia Organic Yukon Select Fries with a touch of Sea Salt (28 oz)
  • 3 T Olive Oil, divided
  • 1 Yellow Bell Pepper, chopped
  • ½ Red Onion, chopped
  • 1 Zucchini, chopped
  • Salt
  • Black pepper
  • 4 Eggs
  • ⅓ C Goat Cheese
  • 1 T Fresh Chives, chopped
  • 1 T Fresh Thyme, chopped
  1. Preheat oven to 425 ̊ F.
  2. Place Alexia Organic Yukon Select Fries With a Touch of Sea Salt on a baking sheet in a single layer. Bake for 18-20 minutes, flipping halfway through to ensure maximum crispiness.
  3. Heat 2 tablespoons oil in a large skillet over medium heat. Add peppers and onions and sauté until onions have softened, about 7 minutes. Add zucchini and cook for another 3-4 minutes. Season vegetables with salt and pepper. Remove from heat and set aside.
  4. Add remaining tablespoon of oil to a separate skillet over medium-high heat and, working in batches, fry the eggs to desired doneness. Season eggs with salt and pepper. 
  5. To assemble, divide the fries among plates and top with vegetables. Crumble goat cheese over vegetables and top with a fried egg. Garnish with chives and thyme.
