Mediterranean Loaded Breakfast Fries

These Mediterranean-inspired loaded breakfast fries include sautéed bell pepper, red onion, and zucchini, and are topped off with a fried egg, crumbled goat cheese, and fresh herbs.

Ingredients

  • 1 bag Alexia® Organic Yukon Select Fries (22 oz)
  • 3 tbsp Olive Oil, divided
  • 1 Yellow Bell Pepper, chopped
  • ½ Red Onion, chopped
  • 1 Zucchini, chopped
  • Salt
  • Black pepper
  • 4 Eggs
  • ⅓ cup Goat Cheese
  • 1 tbsp Fresh Chives, chopped
  • 1 tbsp Fresh Thyme, chopped

Directions

  1. Prepare the fries according to package instructions.

  2. Heat 2 tablespoons oil in a large skillet over medium heat. Add peppers and onions and sauté until onions have softened, about 7 minutes. Add zucchini and cook for another 3-4 minutes. Season vegetables with salt and pepper. Remove from heat and set aside.

  3. Add remaining tablespoon of oil to a separate skillet over medium-high heat and, working in batches, fry the eggs to desired doneness. Season eggs with salt and pepper.

  4. To assemble breakfast fries, divide the Alexia® Yukon fries among plates and top with vegetables. Crumble goat cheese over vegetables and top with a fried egg. Garnish with chives and thyme and enjoy delicious fries for breakfast.
