Cinnamon Sugar Dusted Sweet Potato Fries

These dessert fries are lightly tossed with cinnamon and sugar just after baking, then topped with a fresh apple compote, pecans and a drizzle of maple icing.

  • 1 Bag Alexia Organic Sweet Potato Fries (15 oz)
  • 2 T Sugar
  • ¾ tsp Cinnamon (¼ tsp compote, ½ tsp topping)
  • 2 Small Apples, peeled, cored, and cut into ½-inch chunks
  • 1 T Fresh Lemon Juice
  • 2 small apples, peeled, cored, and cut into ½-inch chunks
  • 2 T Brown Sugar
  • ½ C Powdered Sugar
  • 1 T Maple Syrup
  • 1 tsp Water
  • ¼ C Chopped Pecans
  • Cooking Spray
  1. Preheat oven to 425 ̊ F.
  2. Combine ½ teaspoon cinnamon and sugar in a small bowl. Set aside.
  3. Place Alexia Organic Sweet Potato Fries on a baking sheet in a single layer. Bake for 18-22 minutes, flipping halfway through to ensure maximum crispiness.
  4. Meanwhile, combine apples, lemon juice, brown sugar and ¼ teaspoon cinnamon. Cover, and cook over low heat, stirring occasionally, until apples are tender, about 20 minutes. Let cool slightly.
  5. In a small bowl, whisk together powdered sugar, maple syrup and water. Set aside.
  6. When fries are done baking, spray lightly with cooking spray and toss with cinnamon sugar immediately. Top with apple compote and pecans and drizzle with maple icing.
