Cinnamon Sugar Dusted Sweet Potato Fries

These dessert fries feature sweet potato fries with cinnamon and sugar added just after baking, then they’re topped with a fresh apple compote, pecans, and a drizzle of maple icing.

Ingredients

  • 1 bag Alexia® Organic Sweet Potato Fries (15 oz)
  • 2 tbsp Sugar
  • ¾ tsp Cinnamon (¼ tsp compote, ½ tsp topping)
  • 2 Small Apples, peeled, cored, and cut into ½-inch chunks
  • 1 tbsp Fresh Lemon Juice
  • 2 tbsp Brown Sugar
  • ½ cup Powdered Sugar
  • 1 tbsp Maple Syrup
  • 1 tsp Water
  • ¼ cup Chopped Pecans
  • Cooking Spray

Directions

  1. Combine ½ teaspoon cinnamon and sugar in a small bowl. Set aside.

  2. Prepare the fries according to package instructions.

  3. Meanwhile, combine apples, lemon juice, brown sugar, and ¼ teaspoon cinnamon. Cover, and cook over low heat, stirring occasionally, until apples are tender, about 20 minutes. Let cool slightly.

  4. In a small bowl, whisk together powdered sugar, maple syrup, and water. Set aside.

  5. When fries are done baking, spray lightly with cooking spray and toss with cinnamon sugar immediately. Top the cinnamon sugar sweet potato fries with apple compote and pecans and drizzle with maple icing.
