Farmer's Market Onion Ring Stir Fry

Ingredients
- 1 bag Alexia® Crispy Onion Rings (13.5 oz)
- 2 tbsp Extra-Virgin Olive Oil
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 8 oz Cremini Mushrooms
- 1 bunch Asparagus
- 1 cup Sugar Snap Peas
- 1 cup Carrots, Thinly Sliced
- 3 Green Onions, Thinly Sliced
- 1/2 cup Bottled Stir-Fry Sauce
- Sesame Seeds for Garnish (optional)
- Steamed Rice (optional)
Directions

Preheat oven to 400°F.

Place onion rings on a large baking sheet lined with aluminum foil or parchment paper and cook according to the package directions.

As onion rings cook, heat olive oil over high heat in a large skillet or wok.

Once olive oil begins shimmering, add red and yellow peppers, mushrooms, asparagus, snap peas, and carrots. Toss mixture in oil and stir occasionally, about 3 to 4 minutes, until vegetables begin to soften.

Reduce heat to medium. Add stir-fry sauce to vegetable mixture. Stir, coating all vegetables evenly, and cook for an additional 1 to 2 minutes until sauce thickens.

Add salt and pepper to taste. Top with cooked onion rings.

For each serving, top with green onions and a sprinkle of sesame seeds. Serve with steamed white rice.
