Ingredients

  • 1 bag Alexia® Crispy Onion Rings (13.5 oz)
  • 2 tbsp Extra-Virgin Olive Oil
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 8 oz Cremini Mushrooms
  • 1 bunch Asparagus
  • 1 cup Sugar Snap Peas
  • 1 cup Carrots, Thinly Sliced
  • 3 Green Onions, Thinly Sliced
  • 1/2 cup Bottled Stir-Fry Sauce
  • Sesame Seeds for Garnish (optional)
  • Steamed Rice (optional)

Directions

  1. Preheat oven to 400°F.

  2. Place onion rings on a large baking sheet lined with aluminum foil or parchment paper and cook according to the package directions.

  3. As onion rings cook, heat olive oil over high heat in a large skillet or wok.

  4. Once olive oil begins shimmering, add red and yellow peppers, mushrooms, asparagus, snap peas, and carrots. Toss mixture in oil and stir occasionally, about 3 to 4 minutes, until vegetables begin to soften.

  5. Reduce heat to medium. Add stir-fry sauce to vegetable mixture. Stir, coating all vegetables evenly, and cook for an additional 1 to 2 minutes until sauce thickens.

  6. Add salt and pepper to taste. Top with cooked onion rings.

  7. For each serving, top with green onions and a sprinkle of sesame seeds. Serve with steamed white rice.
