Blue Cheese and Bacon Roasted & Ready® Potatoes
Topped with a creamy and delicious blue cheese dressing, decadent bacon, and herbs, these Alexia® Roasted & Ready® baby potatoes are a crowd favorite at brunch.
Ingredients
- 1 Bag Alexia® Roasted & Ready® Baby Golden Potatoes with Himalayan Salt (16 oz)
- 4 oz Bacon, sliced
- ½ cup Sour Cream
- ¼ cup Mayonnaise
- 1 tbsp Fresh Lemon Juice
- 1 Garlic Clove, minced
- 1 tsp Dried Parsley
- 4 oz Blue Cheese, crumbled (divided)
- 2 tbsp Milk or Buttermilk, more as needed to thin
- Salt, to taste
- Fresh Parsley, chopped for garnish

Prepare the fries and bacon according to package instructions.

Meanwhile, in a small food processor or blender, add the sour cream, mayonnaise, lemon juice, garlic, parsley, and 2 oz blue cheese crumbles. Pulse until combined, then add the milk or buttermilk and combine until smooth and desired consistency is reached (you might want to add more for a thinner dressing). Salt to taste.

Meanwhile, in a small food processor or blender, add the sour cream, mayonnaise, lemon juice, garlic, parsley, and 2 oz. blue cheese crumbles. Once the potatoes are cooked, add to a serving bowl and toss with crumbled bacon, then drizzle with the dressing and garnish the blue cheese potatoes with remaining blue cheese crumbles and parsley.

Store any remaining potatoes and blue cheese dressing in an airtight container in the fridge.
