Bacon Wrapped Puffs with Manchego and Fig Jam

Bacon-wrapped Alexia Organic Yukon Select Puffs are stuffed with a small slice of manchego cheese. Just before serving, these delicious bites are garnished with fig jam and a bit of fresh parsley for color.

  • 1 Bag Alexia Organic Yukon Select Puffs (16 oz)
  • 1 6 oz Piece Manchego, cut into 48 pieces
  • 16 Slices Bacon, each slice cut into thirds
  • ⅓ C Fig Jam
  • Flat-Leaf Parsley, chopped
  • Special equipment: toothpicks
  1. Preheat oven to 425 ̊ F.
  2. Place Alexia Organic Yukon Select Puffs on a baking sheet in a single layer. Bake for 20-22 minutes, flipping halfway through to ensure maximum crispiness.
  3. Remove from oven and let stand until cool enough to handle. Top each puff with a small piece of manchego. Wrap each puff tightly with a piece of bacon and secure with a toothpick.
  4. Arrange evenly on a wire baking rack set over a foil-lined baking sheet with raised edges (for easy cleanup) and bake for 10 minutes. Flip and bake for another 10 minutes.
  5. Remove from the oven and transfer to paper towels to drain. Top each with a dollop of fig jam and garnish with chopped parsley before serving.
