- 1 Bag Alexia Crispy Bite-Sized Sweet Potato Puffs (20 oz)
- 4-6 Corn Tortillas
- 2 Avocados
- Juice of 1 Lime
- Salt and Pepper, to taste
- Pickled Red Onions, sliced to taste
- Radish, sliced to taste
- Fresh Cilantro, chopped, to taste
- Jalapeño, sliced to taste
- Queso Fresco, crumbled, to taste
- Preheat oven to 425°F. On a baking sheet, add corn tortillas with a little bit of oil and salt, then toast for about 10-15 minutes until crispy and crunchy. Remove and set aside.
- Sweet potato tots preparation: OVEN: In 425°F oven, place tots on a baking sheet in a single layer. Bake for 22-27 minutes, flipping halfway through to ensure maximum crispiness.
- AIR FRYER: Preheat air fryer to 360°F. Fill basket with half the frozen potatoes. Cook 12-14 minutes. Slide out basket halfway through cooking time and shake.
- While the tots are cooking, mash avocado with salt, pepper and lime juice, and prep toppings by slicing pickled red onions, radish, cilantro and jalapeño.
- Assemble everything by lathering guacamole mixture on the tostada, adding tots, and topping with pickled red onions, queso fresco, radish, jalapeño and cilantro. Enjoy!
