Sweet Potato Tots Tostada

Alexia® Sweet Potato Puffs, avocado, pickled onions, spicy jalapeño, and queso fresco come together to create tostadas with a twist.

Ingredients

  • 1 bag Alexia® Sweet Potato Puffs (20 oz)
  • 4-6 Corn Tortillas
  • 2 Avocados
  • Juice of 1 Lime
  • Salt and Pepper, to taste
  • Pickled Red Onions, sliced to taste
  • Radish, sliced to taste
  • Fresh Cilantro, chopped, to taste
  • Jalapeño, sliced to taste
  • Queso Fresco, crumbled, to taste

Directions

  1. Preheat oven to 425°F. On a baking sheet, add corn tortillas with a little bit of oil and salt, then toast for about 10-15 minutes until crispy and crunchy. Remove and set aside.

  2. Prepare the sweet potato tots according to package instructions.

  3. While the tots are cooking, mash avocado with salt, pepper, and lime juice, and prep toppings by slicing pickled red onions, radish, cilantro, and jalapeño.

  4. Assemble everything by lathering guacamole mixture on the tostada and adding tots. Next, top the sweet potato tostadas with pickled red onions, queso fresco, radish, jalapeño, and cilantro. Enjoy!
