Not your everyday seafood canapes. These lemony smoked salmon bites topped with dabs of creamy caper ricotta atop individual Waffle Cut Sweet Potato Fries make for the perfect party platter.

  • 1 Bag Alexia Waffle Cut Sweet Potato Fries (20 oz)
  • 8 oz Ricotta Cheese
  • ¼ C Milk
  • 2 T Capers, chopped with brine
  • Ground Black Pepper
  • Dill, chopped and extra sprig for garnish
  • Chives, chopped
  • 6-8 oz Smoked Salmon, thin pieces
  • 1-2 Lemons, zested
  • Lemon Wedge, on the side
  1. Preheat oven to 425 ̊ F.
  2. Place Waffle Cut Sweet Potato Fries on a baking sheet in a single layer. Bake for 25-28 minutes, flipping half way through to ensure maximum crispiness.
  3. During the baking process, whip up caper ricotta (ricotta cheese, milk, capers, black pepper) using a hand mixer until light and airy. Set aside.
  4. Zest lemons using a micro plane or zester. When done, place zest in a small ramekin until plating.
  5. Remove Waffle Fries from oven and place onto a cool baking sheet. Spoon or pipe on caper ricotta. Add a torn piece of smoked salmon and finish with fresh lemon zest.
  6. Place completed pieces onto a serving platter and enjoy!

Flip and rotate Fries half-way through baking to ensure maximum balance and crispiness!
