Ingredients

  • 16 oz Alexia® Crispy Seasoned Potato Puffs with Roasted Garlic & Cracked Black Pepper​
  • 2 English Cucumbers​
  • 4 Radishes​
  • 1 cup Plain Yogurt ​
  • 1 tbsp Lemon Juice
  • 2 Green Onions, sliced thinly​
  • 2 tbs Dill, finely chopped​
  • ¼ tsp Salt
  • ¼ tsp Pepper​

Directions

  1. Slice the cucumbers and radishes thinly, preferably with a mandolin. ​

  2. In a large bowl, combine the sliced cucumbers, radishes, chopped dill, and green onion.​

  3. In a separate bowl or jar, mix the yogurt, lemon, salt, and pepper. Adjust seasoning as desired. 

  4. Prepare Alexia® Crispy Seasoned Potato Puffs according to instructions on package. ​

  5. Combine cooked puffs with vegetables and mix with dressing.

  6. Serve immediately.
