This delicious loaded sweet potato fries recipe is topped with a creamy avocado mash and finished with a sprinkling of goat cheese, POM arils, and cumin and chili for spice.

Ingredients

  • 1 bag Alexia® Sweet Potato Fries (15 oz)
  • 2 Avocados
  • 1 tsp Ground Cumin
  • ½ tsp Hot Sauce
  • ¼ tsp Kosher Salt
  • ⅛ tsp Ground Black Pepper
  • 2 tsp Fresh Lime Juice
  • 2 oz Goat Cheese, crumbled
  • ¼ cup POM arils (seeds)
  • 1 tsp Maldon Sea Salt Flakes
  • 2 tsp Agave Nectar
  • Cumin
  • Chili

Directions

  1. Prepare the fries according to package instructions.

  2. In medium mixing bowl, scoop out avocado and mash along with dry ingredients, hot sauce, and fresh lime juice. Add additional kosher salt to taste. Optional: Make this in advance and save one of the avocado seeds to place in the bowl with the avocado mash to help prevent browning. In this instance, if covering with plastic wrap, ensure the wrap is touching all the mash to prevent oxidation/browning.

  3. Remove fries from oven. Build loose assortments on individual plates.

  4. Now place some of the avocado mash directly onto the hot fries and finish with goat cheese, POM arils, and a sprinkle of sea salt, cumin, and chili if you like a little extra spice. Finally, drizzle agave nectar on each plate and enjoy flavorful, loaded sweet potato fries.
