Avocado Madness

You’ll go mad for these small stacks of crispy Sweet Potato Fries topped with a creamy avocado mash and finished with a sprinkling of goat cheese, POM arils, and cumin and chili for spice.

  • 1 Bag Sweet Potato Fries (15 oz)
  • Smashed Avocado
  • 2 Avocados
  • 1 tsp Ground Cumin
  • 1/2 tsp Hot Sauce
  • 1/4 tsp Kosher Salt
  • 1/8 tsp Ground Black Pepper
  • 2 tsp Fresh Lime Juice
  • Garnish
  • 2 oz Goat Cheese, crumbled
  • 1/4 C POM arils (seeds)
  • 1 tsp Maldon Sea Salt Flakes
  • 2 tsp Agave Nectar
  • Cumin
  • Chili
  1. Preheat oven to 425 ̊ F.
  2. Place julienned Sweet Potato Fries on a baking sheet in a single layer. Bake for 18-22 minutes, flipping half way through to ensure maximum crispiness.
  3. In medium mixing bowl, scoop out avocado and mash along with dry ingredients, hot sauce and fresh lime juice. Add additional kosher salt to taste. Optional: Make this in advance and save one of the avocado seeds to place in the bowl with the avocado mash to help prevent browning. In this instance, if covering with saran wrap, ensure the wrap is touching all of the mash to prevent oxidation/browning.
  4. Remove Fries from oven. Build loose assortments on individual plates.
  5. Now place some of the avocado mash directly onto the hot Fries and finish with goat cheese, POM arils and a sprinkle of sea salt, cumin and chili if you like a little extra spice. Finally, drizzle agave nectar on each plate and serve with a fork.

Cook's Tips

Save one of the avocado seeds if you are making this in advance and place into the bowl with the avocado mash to help prevent browning. If covering with saran wrap, ensure the wrap is touching all of the mash to prevent oxidation/browning.
