- 1 Bag Alexia Sweet Potato Fries (15 oz)
- 1 C Fire Roasted Tomatoes, crushed
- ½ tsp Granulated Sugar
- ½ tsp Kosher Salt
- ¼ tsp Ground Black Pepper
- Uncured Turkey Bacon, cooked (8 oz)
- 1 head Butter or Boston Lettuce, leaves washed and removed
- 1 Avocado, sliced to yield 12 slices
- Preheat oven to 425 ̊ F.
- Place julienned Sweet Potato Fries on a baking sheet in a single layer. Bake for 18-22 minutes, flipping half way through to ensure maximum crispiness.
- Optional: Begin cooking bacon at the same time as Fries. Otherwise, cook separately in a pan on the stovetop and drain the grease post cooking. Set aside.
- In a small microwavable bowl, mix tomatoes and seasonings. Cover and microwave 45-60 seconds. Remove, stir and set aside to cool.
- Slice avocado and wash and pull apart lettuce leaves.
- On a baking sheet or clean work surface, place individual lettuce leaves, adding 2 teaspoons of the fire roasted tomato jam to each.
- Place several cooked slices of bacon down on a separate clean cutting board or clean work surface. On each strip of bacon, place 5-6 Fries and an avocado slice. Wrap into a bundle. Do this until all Fries are wrapped. Place in lettuce leaves.
- Serve on a large platter along with the additional tomato jam in a ramekin for dipping.
