1 pkg (20.11 oz each) Duncan Hines® EPIC Pumpkin Spice Cookie Kit
4 tablespoons melted butter
1 egg
1 tablespoon water
3 ounces cream cheese, softened
1 tablespoon granulated sugar
1 pkg (12 oz each) white chocolate chips
1 teaspoon vegetable oil

Preheat oven to 375°F. Spray large baking sheet with PAM®. Stir together cookie mix, melted butter, egg, and water in a medium bowl until well blended.
Divide dough into 12 even portions, about 1-1/2 tablespoons each, and roll each into a ball. Place on baking sheet. Flatten into 2-inch circles with the palm of your hand.
Bake 11 to 14 minutes, until lightly browned. Cool on pan 2 minutes before removing to wire rack to cool completely.
Place cooled cookies in a large bowl and use your hands to break them into tiny pieces. Stir in frosting. Stir together cream cheese and granulated sugar in a small bowl.
Scoop about 1 tablespoon of the cookie mixture and flatten it into a disc about 2-inches in diameter. Put a small dot of cream cheese in the center, about 1/2-teaspoon and then form the cookie mixture around the cream cheese to enclose it in the center. Roll into a ball. Place on baking sheet lined with waxed paper. Repeat with remaining cookie mixture and cream cheese; freeze 15 to 45 minutes, until firm.
Pour white chocolate chips and vegetable oil into a medium microwave-safe bowl. Microwave 30 seconds. Stir and continue microwaving in 10 to 15 second increments until melted and smooth, stirring between each.
Dip frozen truffles in melted chocolate. Lift with a fork and tap gently to let excess drip off. Place on baking sheet. Decorate with sprinkles. Freeze pumpkin spice cookie truffles 10 minutes, until chocolate is set and serve!
