Main Course
Meatloaf & Alexia Potatoes
Active Time: 10 minutes [Start to finish: 30 minutes]
Makes four servings
Ingredients
- 24 oz Lean Ground Beef
- 1 ½ cups Fresh Bread Crumbs
- ½ cup Milk
- 2 beaten Eggs
- 1 large chopped Onion
- ¼ cup diced Carrots
- ¼ cup diced Celery
- ¼ cup Tomato Puree (or Ketchup)
- ¼ cup toasted Pine Nuts or Sliced Almonds
- ¼ cup Parmesan cheese (optional)
- 2 cloves minced Garlic
- ¼ cup Chopped Fresh Parsley
- 1 teaspoon Marjoram
- 1 teaspoon Thyme
- 1 teaspoon Sea Salt
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Worcestershire Sauce
- 2 tablespoon Butter or Olive Oil
Preparation
- Preheat oven to 350°F and grease a loaf pan or baking sheet.
- Prepare. Soak bread crumbs in milk and eggs for 5 minutes. Sauté the onions, carrots, celery and garlic in the butter or olive oil for 3 to 5 minutes on medium heat.
- Combine all ingredients in a mixing bowl and knead carefully until thoroughly mixed. Do not over mix!
- Bake. Form mixture and place it in the greased loaf pan or baking sheet. Bake for 50 to 60 minutes until the Meat Loaf is firm to the touch and the internal temperature is 170°F.
- Serve. Allow the Meat Loaf to cool for 20 minutes. Slice and serve with your favorite tomato sauce, gravy or savory condiment along with ALEXIA SWEET POTATO FRIES, ALEXIA OVEN CRINKLES OR ALEXIA MASHED POTATOES.
Cook Alexia potatoes according to the directions on the package.
Note: To make fresh bread crumbs, simply cut off the crust from fresh bread slices or rolls. Using a food processor, carefully chop the bread pieces to make light and fluffy fresh breadcrumbs. ALEXIA ARTISAN BREADS™ are a perfect source for this recipe ingredient!
