Crab Cakes & Alexia Potatoes

Active Time: 30 minutes [Total Time: 40-50 minutes]
Makes four servings

Ingredients

  • 1 lb. Fresh Lump Crab Meat (shell pieces removed)
  • 2½ cups soft bread crumbs [see note below]
  • 1/3 cup minced scallions
  • ¼cup chopped fresh parsley
  • 2 tablespoons chopped green olives
  • 1 tablespoon minced garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons milk
  • 1 tablespoon hot sauce
  • 1 teaspoon sea salt
  • 1 teaspoon Worcestershire sauce
  • 2 large eggs, beaten
  • 2 tablespoons peanut oil or another neutral vegetable oil such as corn oil

Preparation

  1. Thoroughly mix all of the ingredients except for the one half of the bread crumbs and the vegetable oil
  2. Shape the mixture into approximately 8½” thick patties. Carefully coat the patties with the remaining bread crumbs
  3. Sauté the patties in a shallow non-stick frying pan on medium high heat for 3 to 4 minutes on each side or until golden brown
  4. Serve hot with Tartar Sauce or Aioli.  Fried Parsley and Lemon slices make a nice garnish

Serve with ALEXIA OVEN FRIES, OVEN REDS or YUKON GOLD JULIENNE FRIES. Cook potatoes according to the directions on the package.

Note: To make fresh bread crumbs, simply cut off the crust from bread slices or rolls. Using a food processor, carefully chop the bread pieces to make light and fluffy fresh breadcrumbs.
