Alexia Chicken Fingers

Ingredients

  • 16 oz Chicken Tenders or boneless, skinless breast meat (cut into strips)
  • ½ cup flour
  • 2 beaten Eggs
  • Juice of ½ Lemon
  • 1 teaspoon Mustard
  • ¼ cup grated Parmesan Cheese
  • ½ teaspoon Worcestershire Sauce
  • ½ teaspoon Garlic Powder
  • 1 ½ cups Fresh or Canned Plain Bread Crumbs*
  • 1 tablespoon Chopped Fresh Parsley
  • ½ teaspoon Rosemary
  • ½ teaspoon Thyme
  • Sea Salt & Ground Black Pepper to taste
  • Vegetable Oil ­ for fryin

Preparation

  1. Whip the eggs together with lemon juice, mustard, parmesan cheese, Worcestershire sauce, and the garlic powder.
  2. Blend the bread crumbs with the parsley, rosemary, thyme, and salt and pepper.
  3. Season the chicken pieces with salt and pepper and dredge them in flour.
  4. Carefully coat the chicken pieces in the egg mixture, one piece at a time.
  5. Remove the excess egg mixture, and coat the chicken pieces in the bread crumb blend.
  6. Sauté or deep fry the chicken tenders at 350 degrees until they are fully cooked, crispy and golden brown. Approximately 3 to 5 minutes.

*To make fresh bread crumbs, simply cut off the crust from fresh bread slices or rolls. Using a food processor, carefully chop the bread pieces to make light and fluffy fresh breadcrumbs. ALEXIA ARTISAN BREADS are a perfect source for this recipe ingredient!
