Alexia Chicken Fingers
Ingredients
- 16 oz Chicken Tenders or boneless, skinless breast meat (cut into strips)
- ½ cup flour
- 2 beaten Eggs
- Juice of ½ Lemon
- 1 teaspoon Mustard
- ¼ cup grated Parmesan Cheese
- ½ teaspoon Worcestershire Sauce
- ½ teaspoon Garlic Powder
- 1 ½ cups Fresh or Canned Plain Bread Crumbs*
- 1 tablespoon Chopped Fresh Parsley
- ½ teaspoon Rosemary
- ½ teaspoon Thyme
- Sea Salt & Ground Black Pepper to taste
- Vegetable Oil for fryin
Preparation
- Whip the eggs together with lemon juice, mustard, parmesan cheese, Worcestershire sauce, and the garlic powder.
- Blend the bread crumbs with the parsley, rosemary, thyme, and salt and pepper.
- Season the chicken pieces with salt and pepper and dredge them in flour.
- Carefully coat the chicken pieces in the egg mixture, one piece at a time.
- Remove the excess egg mixture, and coat the chicken pieces in the bread crumb blend.
- Sauté or deep fry the chicken tenders at 350 degrees until they are fully cooked, crispy and golden brown. Approximately 3 to 5 minutes.

*To make fresh bread crumbs, simply cut off the crust from fresh bread
slices or rolls. Using a food processor, carefully chop the bread pieces to
