Aïoli Dipping Sauce
Aïoli is a French classic and fine accompaniment to ALEXIA Oven Fries.
Makes 1½ cups of stasty Garlic Mayonnaise with Saffron
Ingredients
- 1 medium Garlic Clove
- 2 Egg Yolks (large)
- 1¼ cups Extra Virgin Olive Oil
- 1 tablespoon Fresh Lemon Juice
- 1 tablespoon Dijon Mustard
- 2 teaspoons Salt
- ½ teaspoon Fresh Ground Black Pepper
- 1 pinch Saffron
Preparation
- Crush the garlic to a paste in a medium mixing bowl. Add a pinch of salt and saffron during the crushing process
- Add the egg yolks, lemon juice and mustard. Blend well with a whip
- Add Olive Oil in slow steady stream until the sauce has thickened. If the sauce becomes too thick, add a drop or two of hot water
- Season with Salt and Pepper
