Aïoli Dipping Sauce

Aïoli is a French classic and fine accompaniment to ALEXIA Oven Fries.

Makes 1½ cups of stasty Garlic Mayonnaise with Saffron

Ingredients

  • 1 medium Garlic Clove
  • 2 Egg Yolks (large)
  • 1¼ cups Extra Virgin Olive Oil
  • 1 tablespoon Fresh Lemon Juice
  • 1 tablespoon Dijon Mustard
  • 2 teaspoons Salt
  • ½ teaspoon Fresh Ground Black Pepper
  • 1 pinch Saffron

Preparation

  1. Crush the garlic to a paste in a medium mixing bowl. Add a pinch of salt and saffron during the crushing process
  2. Add the egg yolks, lemon juice and mustard. Blend well with a whip
  3. Add Olive Oil in slow steady stream until the sauce has thickened. If the sauce becomes too thick, add a drop or two of hot water
  4. Season with Salt and Pepper
