1/4 cup distilled white vinegar
1/4 cup water
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 cup thinly sliced red onion
4 ounces feta cheese or vegan alternative
2 ounces cream cheese or vegan alternative
2 tablespoons sour cream or vegan alternative
1/2 teaspoon grated lemon zest
1/8 teaspoon cracked black pepper
2 Gardein® Ultimate Plant-Based Burgers
2 hamburger buns
2 leaves green leaf lettuce
2 slices tomato

PICKLED RED ONIONS: Bring vinegar, water, sugar, and salt to a boil in a small pot. Place onion in a heat-proof bowl. Pour hot vinegar over onions and let stand until cool, about 20 minutes.
WHIPPED FETA: Place feta, cream cheese, sour cream, lemon zest, and black pepper in food processor. Process until smooth and creamy, about 3 minutes, scraping down the bottom and sides frequently.
Cook burgers according to package directions. Place lettuce and tomato on bottom buns. Top with burgers, a large dollop of whipped feta and pickled red onions and serve!
Store leftover whipped feta in the refrigerator up to 3 days. Serve with vegetables or pita chips for dipping!
