1 can (28 oz each) Italian whole peeled tomatoes, undrained
1 small onion, chopped fine
2 medium cloves garlic, chopped fine
2 tablespoons extra virgin olive oil
1/4 cup dry white wine (such as Pinot Blanc or Chardonnay)
2 tablespoons tomato paste
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh Italian (flat-leaf) parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Puree tomatoes (preferably through food mill).
Sauté chopped onion and garlic in medium saucepan in olive oil until golden brown. Add the white wine and cook for 3 minutes.
Add the tomatoes and the tomato paste and simmer the sauce for 20 to 30 minutes or to the desired consistency. Add the basil, parsley, salt and pepper.
